What does your business offer that is unique compared to similar businesses?

Our cuisine is prepared daily with the freshest of ingredients. We strive to prepare classical French dishes that our guests expect to have and to offer a relaxed dining experience. The key to any great restaurant is the quality of the food, wine and service, which is what we offer our guests.

What is the most important part of your job on a daily basis?

Managing and preparing the food for the guests is the most important part of the job. If the food does not meet the standards of my guests, then I have failed in being a chef. The highest quality of ingredients must be met at all times so we can create the best flavors and sauces.

What are your keys to success?

My keys to success I owe to my team and my family. This is not a one-man restaurant, and it takes a team effort to successfully prepare and manage it correctly.  I have learned that it takes hard work and long hours from my family, who have been the support and backbone to my success.

What surprises you most about your job?

What surprise me the most is as an executive chef, you create dishes specifically where the sauces complement the foods on the plate and inevitably a guest will ask for a substitution of a food item or replace a sauce with another one.  I work hard to get the proper flavors for each dish, and when they are not used together, it does not complement the dish.

Tell us something most people wouldn’t know about your company.

Éclair Bistro has been delighting guests for more than five years in Cedar Hill; we just recently moved to McKinney on the downtown square. We are a family owned business: my mother, Lynn, is the pastry chef and my dad, David, runs the front of the restaurant. I serve at the pleasure of my guests.
