My Gluten-Free Friend produces a line of frozen, small batch foods that are gluten-free. The line consists of several pizzas, crab cakes, green chile enchiladas, meatloaf, meatballs and marinara, vegetarian and vegan enchiladas, posole, and several individual-serving lunch bowls. Their larger products feed two to four people, and their lunch bowls offer single portions perfect for lunch or a quick dinner. They sell products at the Historic McKinney Farmers Market at Chestnut Square, the Coppell Farmers Market, and online with delivery.

What does your business offer that is unique compared to similar businesses?

Our company offers frozen, gluten-free meals made from scratch in small batches.  As we like to say, “We take out the gluten, not the flavor.” As small-batch producers, we can fill orders accommodating special-need diets like low salt and dairy free. Our customers appreciate our portions and our flavorful foods.

What is the most important part of our job on a daily basis?

Keeping our products gluten free while not sacrificing flavor is the most important part of our job. 

What are your keys to success?

Listening to our customer feedback and being resourceful with recipes and ingredients has served us well. Customers appreciate having a resource for the gluten-free lifestyle at our farmers market booth. 

What surprises you most about your job?

The number of people who are not gluten-free, but still love our food. We estimate that 50 percent of our customers are actually on a gluten-free diet; the rest just love our food. Our food is very convenient, sold at the market, and very flavorful.

Tell us something most people wouldn’t know about your company.

Most people are surprised when they find out that Renee and I make the food by hand, with no automation in the kitchen. People are also surprised that food can taste this good while being gluten-free and without any preservatives.
