What does your business offer that is unique compared to similar businesses?

We offer a unique dining environment for our guests. Of course I think our food is excellent; there are other places around McKinney to get excellent food. We think our menu style is unique in McKinney and that we offer a “downtown” ambiance.  

What is the most important part of your job on a daily basis?

Ensuring the quality of the food and orchestrating flow of food coming out of the kitchen. I taste virtually every component of every dish that comes out of the kitchen.

What are your keys to success?

Our key to success is to make sure that both the front and back of the house are performing at a high level. My partner, Johnny Carros, and I each have to operate our parts of the business in unison. Great service alone won’t overcome poor food or vice-versa.

What surprises you most about your job?

I have been doing this for a little while so there are few real surprises day to day. Perhaps the biggest surprise for me is how welcoming the people of McKinney have been. Both guests to the restaurant and other nearby businesses have really made us feel at home.

Tell us something most people wouldn’t know about your company.

During our menu development, we almost gave up on our Sugarbacon appetizer. We added the spicy bread and butter pickle, which gave us the missing texture and flavor, and the rest is history. Now it is the best-selling dish I have ever seen.
